Somatic cells and their influence on quality and technological properties of milk (a review)
Abstract
The article presents a review of the literature devoted to the problem of the content of somatic cells in the milk of cows. It was shown that with an increase in the number of somatic cells in milk, its composition and physicochemical properties change. These changes in turn lead to the deterioration of its technological properties, reducing the quality characteristics of milk and finished products
